BECKY’S SALAD

Ingredients:
1 head lettuce
1 head cauliflower, sliced thin (not chopped)
1 Spanish onion, diced fine
1 lb lean bacon, fried and crumbled
1 cup carrots, sliced thin

Dressing:
1/4 cup sugar
1/3 cup Parmesan cheese (from shaker can, not the refrigerated fresh product)
2 cups regular Hellman’s mayonnaise
3 cups seasoned croutons (one box)

Instructions:
Blend the salad dressing ingredients, set aside. Layer the vegetables and bacon in order listed, except the croutons. Top with dressing. Cover tightly. You can do this the night before, if need be. To serve: add croutons at the last minute and toss.
